“Gionbo Gaki” is the Akiota’s special huge persimmon known as a king of persimmon named from the shape of the fruits that is big and similar to the round head of the priest. It is an astringent persimmon. To pull out the bitter taste, we use alcohol (Shochu, it's a Japanese distilled spirit) or dry ice to sweet for eating in the fall or peel the skin and dried in the cold air in the early winter. It has a very rich texture and light elegant sweetness. Not only its great taste, it is recognized as a strong anti-virus agriculture product because of the large amount of persimmon tannin inside the fruits.
